Club Sandwich

- 5 slices bacon, cut in half
- 1/3 cup fat-free mayonnaise
- 2 Tbsp scallions, minced
- 1/2 tsp dried tarragon
- 4 slices white bread
- 1 tomato, thinly sliced
- 2 slices whole wheat bread
- 1/2 lb cooked turkey breast, thinly sliced
- 2 lettuce leaves
Heat a heavy nonstick skillet over medium high heat. Cook bacon 5-7 minutes, turning frequently, until browned and crisp. Transfer bacon to paper towels to drain. Thoroughly mix mayonnaise, scallions and tarragon in a bowl. Spread mixture over 1 side of each piece of bread. Divide bacon and tomato on 2 pieces white bread and top with 2 pieces whole wheat bread. Divide turkey and lettuce over whole wheat bread. Top each sandwich with remaining white bread, mayonnaise side down. Cut each sandwich in half diagonally and secure with toothpicks, if desired.
