Strawberry Shortcake

- 2 cups flour
- 1 Tbsp baking powder
- 1/2 tsp salt
- 3/4 cup sugar
- 1 egg
- 3 Tbsp margarine, melted
- 1 cup milk
- 1 quart ice cream
- 1/2 cup whipped cream, optional
- 4 cups strawberries, hulled
- 1/4 cup sugar
Preheat oven to 350°F. Prepare an 8x8 in. pan with nonstick cooking spray. In a large bowl, sift together flour, baking powder, salt and sugar. Add egg, margarine, and milk; mix well. Bake 25-30 minutes or until light brown. Remove from oven; cool.
To make sauce, in a large bowl, mix together strawberries and sugar. Let stand 30 minutes or until sugar is dissolved.
To serve, cut shortcake into pieces; add ice cream. Spoon strawberry sauce over ice cream. Garnish with whipped cream or topping.
